Cantayano 2022

VINEYARD: Verdejo from different owned parcels, all of them located in the municipality of La Seca, Spain. Organic and sustainable viticulture. Vines aged between 20 and 30 years located about 730m above sea level. Clay loam soils with limestone outcrops and boulder cloak. Yield of 40 hl/ha.

ELABORATION: The harvest was done by hand between September 17th and 25th 2016 and then grapes were macerated for 8 hours. The spontaneous fermentation was carried out for 40 days at a temperature of 15ºC, 90% in stainless steel tanks and 10% in French oak barrels of 500 liters. Ageing on lees without battonage for 8 months.
